EXECUTIVE CHEF - FIDDLESTIX / GOLD SPIKE
FIDDLESTIX / GOLD SPIKE is looking for a wildly passionate Executive Chef who is extremely flexible, eager to tackle new challenges, and comfortable working in an unconventional (but super fun) environment.
Essential Duties and Responsibilities:
- Provide support for all departmental functions
- Maintain a motivated, happy, work environment for all employees
- Ongoing coordination with FOH management team
- Assume primary responsibility for kitchen food production according to recipes
- Guides Cooks in preparation of daily prep lists and job assignments - ensures kitchen staff members are following up to date and accurate recipes
- Immediate supervision of kitchen staff
- Ensures orders for supplies and products are timely and accurate.
- Keep all coolers and shelves clean, well-stocked and properly rotated
- Follows established food safety, cleaning and maintenance procedures according to SNHD guidelines
- Basic knowledge of HACCP procedures
- Be aware of new products and recipes that become available
- Analyze and control product transfers, waste and spoilage
- Know and practice proper lifting techniques and safe use of all tools and equipment
- Practice proper care and maintenance of all equipment
- Report safety violations and hazards immediately; maintain department security
- Know product availability, preparation, storage and nutritional aspects
- Keep department leadership informed of all events that affect the kitchen
- Ensure that product mix meets varied customer dietary needs and requests
- Have a good understanding of department financials and labor budgets
- Accept and process product from vendors
- Document product transfers, waste and spoilage using appropriate forms
- Ensure the quality, palatability and presentation of all in-house production
- Maintain high productivity levels
- Manage inventory, margin analysis and cost control
- Work with all production kitchen staff members to minimize waste
- Perform staff duties as required to run the department
- Other duties as assigned
Requirements:
- Able to create menus for large parties and special events as requested by guests and planners
- Read and understand BEOs, order sufficient product, and execute large parties and special events
- Able to meet physical job requirements; including ability to lift up to 40 pounds
- Must have a passion for creating foods that entertain
- Able to communicate effectively with others and convey enthusiasm
- Possess prior customer service experience
- Must be self-motivated, team-oriented and solution-driven
- Available for flexible scheduling to meet the needs of the department
- Desire to learn and contribute to all aspects of the venue
Education/Experience:
- Minimum five (5) years previous F&B experience in a Chef or similar kitchen management position
- High school degree or equivalent
